Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 150 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté until soft.
3. Add the bell pepper and zucchini to the pan, cooking for about 5 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes and oregano, seasoning with salt and pepper. Cook for a few more minutes.
5. Combine the cooked pasta with the vegetable mixture and heat everything together.
6. Serve your pasta topped with grated Parmesan cheese and fresh basil if desired. Enjoy!
