A delicious and healthy fish patty made from pike, perfect for a light meal.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g pike, ground
- 1 dl panko breadcrumbs
- Generous amount of dill and chives, finely chopped
- 50 g grated Parmesan cheese
- 2 eggs
- 1.5 tsp salt
- 0.5 tsp white pepper
- Pinch of cayenne pepper
- 1 dl all-purpose flour
- 2 dl panko breadcrumbs
- Salt
- White pepper
Instructions:
1. Place the ground pike in a bowl and fluff it with a fork.
2. Add the panko breadcrumbs, grated Parmesan, and finely chopped dill and chives. Mix the ingredients with a fork.
3. In a separate bowl, whisk the eggs with salt, white pepper, and cayenne pepper.
4. Add the seasoned egg mixture to the fish mixture and stir until fluffy.
5. Divide the mixture into eight portions and gently shape them into patties.
6. Prepare three bowls: one with all-purpose flour, one with whisked eggs, and one with panko breadcrumbs mixed with salt and white pepper.
7. Dredge each patty in flour first, then dip it in the egg, and finally coat it with panko breadcrumbs.
8. Once four patties are coated, make a small indentation in the center of each.
9. Place the patties in the air fryer basket without parchment paper and cook at 200°C (392°F) for 8 minutes, flip the patties, and cook for an additional 3 minutes.
10. While the first batch cooks, coat the remaining pike patties.
11. Serve with mashed potatoes and tartar sauce.
