Deliciously crispy crackling on the outside with juicy, flavorful pork on the inside. Perfect for a special dinner or gathering.
Preparation Time: 10 minutes (plus chilling time)
Cooking Time: 55 minutes
Serving Size: 4-6 servings

Ingredients:

- 1-1.5 kg boneless pork belly, skin on
- Maldon or similar sea salt

Instructions:

1. Make shallow cuts in the pork belly skin, about half a centimeter apart, being careful not to cut into the meat.
2. Rub a generous amount of sea salt into the cuts and sprinkle some on the other surfaces of the pork belly.
3. Place the seasoned pork belly in the refrigerator for a few hours, preferably overnight.
4. Preheat the air fryer to 200°C (392°F) for 2-3 minutes.
5. Place the pork belly in the air fryer basket and cook at 200°C (392°F) for 25 minutes to achieve crispy skin.
6. Reduce the temperature to 160°C (320°F) and cook for an additional 30 minutes. Check the doneness as needed.
7. Remove the pork belly from the air fryer and let it rest on a cutting board before slicing.
8. Serve and enjoy the crispy crackling and juicy meat!
