Hauki Mureke with Bacon and Goat Cheese

A delicious and hearty fish dish perfect for both celebrations and everyday meals. This recipe features a tasty filling of pike, bacon, and goat cheese. Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 6 slices of white bread - 2 dl heavy cream
- Approximately 600 g pike fillet
- 3 eggs
- 1 ½ tsp salt
- 1 tsp sugar
- 1 tsp lemon pepper
- Filling:
- 150 g bacon
- 100 g goat cheese
- 1 dl fresh dill
Instructions:
1. Trim the crusts from the bread and tear it into pieces in a bowl. 2. Pour the cream over the bread and let it soak for about 15 minutes.
3. In another bowl, combine the pike fillets, egg yolks, and spices with the cream mixture and blend into a smooth paste.
4. Whip the egg whites until stiff peaks form and gently fold them into the pike mixture.
5. Chop the bacon and fry it in a skillet until crispy.
6. Mix the crumbled goat cheese and chopped dill with the slightly cooled bacon.
7. Pour half of the pike mixture into a baking dish.
8. Spread the filling over the pike mixture and pour the remaining pike mixture on top.
9. Smooth the surface with a spoon if desired.
10. Place the baking dish inside a larger dish filled with water and bake in the oven at 180°C (350°F).
11. Allow it to cook in the water bath for about 40 minutes.
This delicious pike mureke can be served with mashed potatoes, rice, and salad, or enjoyed on its own with bread.
