This delicious chicken pasta is quick and easy to prepare, perfect for a weekend dinner or a weeknight meal. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 400 g chicken breast fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 ml cooking cream
- 100 g grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a little cooking water.
2. Cut the chicken breast into strips. Heat olive oil in a pan over medium heat and cook the chicken strips until cooked through. Season with salt and pepper.
3. Add the onion and garlic to the pan, cooking until softened.
4. Add the bell pepper and cherry tomatoes, cooking for a few more minutes until the vegetables begin to soften.
5. Pour the cooking cream into the pan and mix well. Allow to simmer on low heat for a few minutes.
6. Add the cooked pasta to the pan and stir. If the pasta seems too dry, add a little reserved cooking water.
7. Finish the dish with grated Parmesan cheese and fresh basil. Serve immediately.
