Spinach and Feta Stuffed Chicken Breasts

Ingredients:
- 4 boneless, skinless chicken breasts - 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, juiced
Instructions:
1. Preheat your oven to 375°F (190°C). 2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add garlic and sauté until fragrant.
3. Add chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
4. In a bowl, combine the cooked spinach, feta cheese, cream cheese, oregano, salt, and pepper. Mix well.
5. Carefully slice a pocket into each chicken breast and fill them with the spinach and feta mixture.
6. Heat the remaining olive oil in a large oven-safe skillet over medium-high heat.
7. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
8. Drizzle lemon juice over the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes until the chicken is cooked through.
9. Let the chicken rest for a few minutes before slicing and serving. Enjoy!
