Hazelnut Mousse
Hazelnut Mousse

A delicious hazelnut mousse that's not too sweet and suits a variety of tastes. Preparation Time: 30 minutes + chilling time
Serving Size: 6 servings
Ingredients:
- 50 g nougat
- 50 g milk chocolate
- 2 dl heavy cream
- 2 egg yolks
- 1/4 dl water
- 1/4 dl sugar
- Salted hazelnuts
- 50 g hazelnuts
- A bit of egg white
- 1 mm sea salt
- 0.5 tsp sugar
Instructions:
1. Chop the nougat and milk chocolate, and melt them together in a water bath.
2. Whip the heavy cream until fluffy and set aside.
3. In a separate bowl, combine the egg yolks and sugar, and whisk until pale and fluffy.
4. Add the melted nougat-chocolate mixture to the egg yolk mixture and mix well.
5. Gently fold the whipped cream into the egg yolk mixture until smooth.
6. Toast the hazelnuts in a pan until golden brown. Allow them to cool and then lightly chop.
7. Stir the chopped hazelnuts into the mousse mixture.
8. Spoon the mousse into serving dishes and chill in the refrigerator for at least 2 hours before serving.
9. Garnish with salted hazelnuts whipped with a bit of egg white and sugar.
