Ingredients:
- 200 g quinoa - 1 tsp salt
- 1 cucumber
- 1 avocado
- 200 g gray beans
- 1 dl light nuts (e.g., pecans)
- 1 dl olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the quinoa in salted water according to package instructions. Drain and let it cool. 2. Peel and dice the cucumber and avocado into small cubes.
3. Rinse and drain the gray beans.
4. In a bowl, combine the quinoa, cucumber, avocado, beans, and light nuts.
5. Prepare the dressing by mixing olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
6. Garnish with fresh parsley before serving.
