A mildly tangy and sweet, yet pleasantly soft dark fiber bread that is not dry despite being gluten-free.
Preparation Time: 2 hours (including rising time)
Serving Size: 1 loaf

Ingredients:

- 500 g gluten-free flour (e.g., rice or buckwheat flour)
- 200 ml water
- 100 ml plain yogurt
- 50 ml honey or maple syrup
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1 packet of dry yeast (about 7 g)
- 50 g seeds (e.g., sunflower or flax seeds)

Instructions:

1. In a large bowl, mix the dry yeast, salt, and gluten-free flour.
2. Add the water, yogurt, honey, olive oil, and apple cider vinegar. Mix until a smooth dough forms.
3. Stir in the seeds and mix well.
4. Cover the bowl with a cloth and let the dough rise in a warm place for about 1 hour.
5. Preheat the oven to 180°C (175°C for fan oven).
6. Grease a bread pan and pour the dough into it. Smooth the surface.
7. Bake the bread in the oven for about 50-60 minutes until it is beautifully golden brown and cooked through.
8. Allow the bread to cool before slicing.
