A delicious vegetable dish inspired by eco-friendly, locally sourced food perfect for summer. Easy to prepare and delightful to enjoy!

Serving Size: 4 servings
Ingredients:
- 2 dl quinoa
- 4 dl water
- 1 bell pepper (preferably different colors)
- 1 zucchini
- 1 red onion
- 2 garlic cloves
- 200 g cherry tomatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Rinse the quinoa under cold water and cook it in a pot with 4 dl of water. Add salt and cook on low heat for about 15 minutes or until the water is absorbed and the quinoa is tender.
2. Chop the bell pepper, zucchini, and red onion into small pieces. Mince the garlic.
3. Heat the olive oil in a frying pan over medium heat. First, add the red onion and garlic, sauté for about 2 minutes.
4. Add the bell pepper and zucchini to the pan, cooking for an additional 5-7 minutes until the vegetables are tender.
5. Add the cherry tomatoes to the pan and season the mixture with black pepper and oregano. Cook for a few more minutes.
6. Mix the cooked quinoa into the vegetable mixture and heat everything together.
7. Serve warm, garnished with fresh herbs.
