A delicious and hearty soup perfect for the first warm days of spring. This tahini-flavored soup is easy to make and loved by the whole family.

Ingredients:

- 1 medium cauliflower
- 1 onion
- 2 garlic cloves
- 1 tablespoon tahini
- 750 ml vegetable broth
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish

Instructions:

1. Chop the onion and garlic. Heat olive oil in a pot and sauté the onion and garlic over low heat for about 5 minutes.
2. Rinse the cauliflower and cut it into small pieces. Add the cauliflower to the pot and sauté for a moment.
3. Pour the vegetable broth into the pot and bring to a boil. Reduce the heat and let the soup simmer for about 15-20 minutes, until the cauliflower is tender.
4. Remove the pot from the heat and add the tahini. Blend the soup with an immersion blender until smooth.
5. Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
