These delicious vegan cookies are the perfect treat for graduation parties. They are easy to make and can be customized to your liking!
Preparation Time: 30 minutes
Serving Size: 80-90 cookies

Ingredients:

- 200 g margarine
- 2 dl oat cream
- 3 dl organic cane sugar
- 5 ½ dl all-purpose flour
- 3 dl potato starch
- 1 ½ tsp baking powder
- (2 tsp cardamom, optional)

Instructions:

1. Melt the margarine in a saucepan and let it cool for a moment.
2. Add the oat cream and cane sugar to the cooled margarine. If desired, you can also add cardamom.
3. In another bowl, mix the all-purpose flour, potato starch, and baking powder.
4. Gradually sift the flour mixture into the margarine mixture, stirring until a smooth dough forms.
5. Take a heaping teaspoon of dough and roll it into a ball or slightly flatten it, then place it on a baking sheet lined with parchment paper.
6. Bake at 200°C (392°F) for about 10 minutes or until the cookies have a nice color on the surface.
7. Allow the cookies to cool before serving. Store in an airtight cookie jar at room temperature.
