These hearty veggie patties are a fantastic option for lunch or dinner. They are vegan and packed with flavor! Preparation Time: 30 minutes
Serving Size: 4 patties
Ingredients:
- 1 can black beans (about 400 g), rinsed and drained - 1 cup rolled oats
- 1 small onion, chopped
- 2 cloves garlic, crushed
- 1 red bell pepper, diced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/4 teaspoon chili powder (optional)
- Oil for frying
Instructions:
1. Heat olive oil in a pan and sauté onion and garlic for a few minutes until soft. 2. Add the bell pepper to the pan and cook for another 5 minutes.
3. Mash the black beans in a bowl with a fork or immersion blender until nearly smooth.
4. Add the oats, cooked vegetables, soy sauce, smoked paprika, salt, black pepper, oregano, and chili powder. Mix well.
5. Shape the mixture into four patties.
6. Heat oil in the pan over medium heat and fry the patties for about 4-5 minutes on each side until golden brown and crispy.
7. Serve the patties with salad or bread.
