A colorful and tasty vegetable pasta that is perfect for a quick and healthy meal, ready in under 30 minutes. Great for lunch or dinner. Preparation Time: 25 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., spaghetti or penne)- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 200 g spinach
- Salt and pepper to taste
- Fresh basil for garnish
- Parmesan cheese (optional)
Instructions:
1. Cook pasta in salted water according to package instructions. Drain and reserve a bit of the cooking water.2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for about 3-4 minutes.
3. Add bell pepper and zucchini to the skillet, continue cooking for another 5-7 minutes until vegetables are tender.
4. Stir in cherry tomatoes and spinach, mixing until the spinach has wilted.
5. Combine the cooked pasta with the vegetables. Add reserved cooking water as needed, along with salt and pepper. Mix well.
6. Serve warm, garnished with fresh basil and grated Parmesan cheese if desired.
