Creamy Broccoli Soup

A rich and creamy broccoli soup that warms both the heart and body. Perfect as an appetizer or a light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g fresh broccoli
- 1 medium onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Wash and chop the broccoli into small pieces.
2. Peel and finely chop the onion and garlic.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, sautéing until soft.
4. Add the broccoli to the pot and pour in the vegetable broth. Cook for about 15 minutes, until the broccoli is tender.
5. Remove the pot from the heat and use an immersion blender or transfer the soup to a blender. Blend until smooth.
6. Stir in the cream and mix well. Heat the soup again, but do not bring it to a boil.
7. Season with salt and pepper. Serve hot and garnish with fresh parsley if desired.
