Ingredients:
- 800 g potatoes - 1 dl olive oil
- 2 tbsp vinegar (e.g., balsamic)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp mustard
- 1 red onion, chopped
- 1 dl fresh herbs (e.g., parsley or chives)
Instructions:
1. Boil the potatoes with their skins in salted water until tender. Drain and let cool slightly.2. Peel the warm potatoes and cut them into cubes.
3. In a bowl, mix the olive oil, vinegar, salt, black pepper, and mustard.
4. Add the potato cubes and chopped red onion to the dressing.
5. Gently toss the bowl to ensure the potatoes are evenly coated with the dressing.
6. Finally, add the fresh herbs and mix lightly.
