A delicious and hearty meatless chili filled with flavor and nutrients, perfect for the whole family.

Ingredients:

- 300 g Härkis
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 medium carrot, grated
- 1 can (400 g) crushed tomatoes
- 1 can (400 g) kidney beans, rinsed and drained
- 1 tbsp chili powder (or to taste)
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh coriander, for serving
- Sour cream, for serving
- Cooked rice, for serving
- Cherry tomato salsa, for serving

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until soft.
2. Add the diced bell peppers and grated carrot. Cook for about 5 minutes until the vegetables start to soften.
3. Stir in the Härkis, crushed tomatoes, rinsed and drained beans, chili powder, cumin, salt, and pepper. Mix well.
4. Let the mixture simmer on low heat for about 15-20 minutes until all the flavors meld and the chili thickens.
5. Serve hot with cooked rice, sour cream, fresh coriander, and cherry tomato salsa.
