*Deliciously spiced vegan dish with Härkis® and eggplant served over fluffy couscous.*
*Preparation time: 30 minutes*
*Serving size: 4 servings*
Ingredients:
- 1 pack Härkis®
- 1 large eggplant
- 1 dl couscous
- 2 dl water
- 2 tbsp Ras El Hanout spice blend
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or cilantro) for garnish
Instructions:
1. Peel and cube the eggplant. Sauté the eggplant cubes in olive oil in a pan until they are soft and slightly golden.
2. Add Härkis® and Ras El Hanout spice blend to the pan. Mix well and cook for a few more minutes.
3. In a pot, bring water to a boil and add couscous. Remove the pot from heat and let the couscous steam for 5 minutes.
4. Stir the steamed couscous into the eggplant-Härkis® mixture and season with salt and pepper.
5. Serve the dish garnished with fresh herbs.
