Ingredients:
- Rose or sea salt - A piece of butter
- Unseasoned beef tenderloin
- Olive oil
- Freshly ground pepper
Instructions:
1. Remove the membrane from the tenderloin and cut the meat into steaks about 2 cm thick. Allow the steaks to sit at room temperature for about an hour. 2. Pat the steaks dry with paper towels and gently flatten them with your fist.
3. In a hot skillet, add a drizzle of olive oil and a knob of butter. Wait until the fat starts to brown slightly.
4. Sear the steaks in the skillet for a few minutes on each side, until they reach your desired level of doneness.
5. Season the steaks with rose or sea salt and pepper just before serving.
