Ingredients

- Pizza Dough:
- 12 cups all-purpose flour
- 50 g fresh yeast
- 5 cups lukewarm water
- 2 tablespoons olive oil
- 1 teaspoon salt
- Tomato Sauce:
- 2 cans crushed tomatoes
- 1 yellow onion
- 3 garlic cloves
- 1 tablespoon white wine vinegar
- 1 tablespoon liquid honey
- 1 teaspoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh herbs (basil, thyme, oregano)
- Oil for sautéing

Instructions

1. Prepare the Pizza Dough:
- Dissolve the yeast in lukewarm water using a wooden spoon.
- Add olive oil, salt, and flour. Knead the dough for about 10 minutes.
- Allow the dough to rise under a cloth for about 1.5 hours.
2. Prepare the Tomato Sauce:
- Sauté chopped onion, garlic, and optional chili in oil over low heat.
- Add crushed tomatoes and the other ingredients. Let simmer uncovered for at least 30 minutes.
- Blend the sauce with an immersion blender.
3. Prepare for Grilling:
- Pre-prepare pizza toppings in bowls next to the grill.
- Roll out the pizza dough on a floured surface.
4. Grill the Pizza:
- Heat the charcoal grill and move the coals to one side.
- Grill the pizza on the hot side for about 2-3 minutes, until the bottom is colored, then move to the cooler side to finish cooking.
5. Serve:
- Top the grilled pizza with your desired toppings and enjoy your summer treat!
