A delicious vegetable medley perfect for summer grilling, but can also be made in the oven during other seasons. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 1 red onion
- 200 g cherry tomatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
Instructions:
1. Rinse and chop the vegetables: slice the zucchini into rounds, cut the bell peppers into strips, and wedge the red onion.
2. Place all the vegetables in a large bowl and add olive oil, salt, black pepper, oregano, and basil. Mix well.
3. Preheat the grill to medium heat or the oven to 200°C (400°F).
4. Pour the marinated vegetables onto a grill pan or baking sheet and grill for about 10-15 minutes or bake in the oven for 20-25 minutes, until the vegetables are tender and have a nice color.
5. Serve warm as a side dish or main course.
