Ingredients:
- 4 portions of fish (e.g., salmon or perch) - 2 bell peppers (different colors)
- 1 zucchini
- 1 red onion
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (e.g., dill or parsley) for garnish
Instructions:
1. Preheat the grill to medium heat. 2. Slice the bell peppers, zucchini, and red onion into strips.
3. In a bowl, mix together olive oil, lemon juice, minced garlic, salt, and pepper.
4. Add the vegetables to the marinade and mix well.
5. Place the fish on the grill and season with salt and pepper. You can also brush some of the remaining marinade over the fish.
6. Grill the fish for about 5-7 minutes on each side until cooked through. Grill the vegetables in a foil packet for 10-15 minutes.
7. Serve the fish and vegetables warm, garnished with fresh herbs.
