Ingredients
- 2 lamb roasts- Olive oil
- Lemon juice
- Oregano
- Salt
- Black pepper
- A few drops of garlic vinegar
Cold Mint Sauce:
- 1 1/2 cups plain yogurt
- Lemon juice
- Fresh mint
- Salt
- Black pepper
Instructions
1. Prepare the marinade: In a bowl, mix just under half a cup of olive oil, a splash of lemon juice, salt, black pepper, and oregano.2. Trim the lamb roasts and rub the marinade all over them. Allow to marinate in the refrigerator overnight.
3. Make the mint sauce: Combine yogurt, lemon juice, chopped mint, salt, and black pepper in a bowl.
4. Preheat the oven to 180°C (350°F). Roast the lamb in the oven for about 1-1.5 hours or until the internal temperature reaches your desired doneness.
5. Let the roasts rest for a few minutes before slicing.
6. Serve the lamb roasts with the mint sauce on the side.
