A perfect grilled burger featuring a combination of grilled beef patty, cheddar cheese, and chorizo sausage that elevates your taste experience. Serve with romesco sauce and pickled red onion!

Serving Size: 4 burgers
Ingredients:
- 400 g ground beef
- Salt and pepper to taste
- 4 slices of cheddar cheese
- 200 g chorizo sausage
- 4 brioche buns
- 1 red onion
- 2 tbsp vinegar (e.g., balsamic)
- 4 tbsp romesco sauce
- Oil for frying
Instructions:
1. Shape the ground beef into four patties and season with salt and pepper.
2. Slice the chorizo sausage and sauté in a pan until golden brown.
3. Grill the patties on a hot grill for about 4-5 minutes on each side until medium doneness. Add the cheddar cheese slices on top of the patties during the last minute of grilling to allow it to melt.
4. Thinly slice the red onion and marinate it in vinegar for about 10 minutes.
5. Toast the brioche buns on the grill or in a pan until crispy.
6. Assemble the burgers: Place a patty with melted cheddar on the bottom half of the bun, add the chorizo slices, romesco sauce, and pickled red onion. Top with the other half of the bun.
7. Serve immediately and enjoy!
