A spicy and flavorful noodle dish that’s quick to prepare. Perfect for a weeknight dinner!

Serving Size: 2 servings
Ingredients:
- 100 g rice noodles
- 1 tablespoon fresh ginger, grated
- 1 garlic clove, crushed
- 1-2 tablespoons gochujang chili paste
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- (optional) tofu and vegetables like napa cabbage and carrots
Instructions:
1. Cook the rice noodles according to package instructions. Drain and set aside.
2. In a pan, heat a little oil and add the grated ginger and crushed garlic. Sauté briefly until fragrant.
3. Add the gochujang, soy sauce, and rice vinegar to the pan. Mix well.
4. Add the cooked noodles to the pan and toss until they are evenly coated in the sauce.
5. If desired, pan-fry tofu and vegetables separately, then add them to the noodle mixture.
6. Serve immediately and enjoy!
