Ingredients:
- 400 g mushrooms
- 1 onion
- 2 garlic cloves
- 1 tbsp butter
- 1 l vegetable broth
- 200 ml cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Finely chop the onion and garlic.
2. Rinse and slice the mushrooms.
3. In a pot, heat the butter over medium heat and add the onion. Sauté the onion for about 5 minutes until soft.
4. Add the garlic and mushrooms to the pot. Cook until the mushrooms are tender and the liquid has evaporated, about 8-10 minutes.
5. Pour the vegetable broth into the pot and bring to a boil. Let the soup simmer on low heat for about 10 minutes.
6. Stir in the cream and mix well. Cook for a few more minutes.
7. Season with salt and pepper to taste.
8. Serve the soup garnished with fresh parsley.
