A delicious and moist date cake, perfect for celebrations or coffee gatherings. This gluten-free version brings the warm scents of Christmas.

Ingredients

- 200 g dates
- 2 dl apple juice
- 1 dl muscovado sugar
- 3 dl almond flour
- 1 tsp cloves
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 2 eggs
- 1/2 dl oil

Instructions

1. Place the dates and apple juice in a saucepan, heat gently, and bring to a boil for about 5 minutes until the dates soften. Blend the mixture using an immersion blender.
2. Add the muscovado sugar, oil, and eggs to the date mixture and mix well.
3. In a separate bowl, combine almond flour, cloves, cinnamon, and baking powder. Add the dry ingredients to the date mixture and stir until smooth.
4. Pour the batter into a greased cake pan and bake at 175°C (350°F) for about 30-35 minutes, until the cake is golden brown and cooked through.
5. Allow the cake to cool before serving.
