Gluten-Free Kampanisu

A traditional Lapland coffee table treat that is soft and fluffy. This recipe yields delicious kampanisus that can be enjoyed plain or with various toppings. Preparation Time: 1 hour
Serving Size: About 25-30 pieces
Ingredients:
- 200 g butter - 1 dl sugar
- 200 g (1 cup) sour milk
- 1 tsp baking soda
- 1 egg
- 8 dl Semper Fin mix flour
- 1 tsp psyllium
Instructions:
1. In a bowl, mix the softened butter and sugar using a spoon until well combined.2. Add a few deciliters of the flour mixture to the bowl and mix.
3. Combine the baking soda with the sour milk and pour it immediately into the butter mixture.
4. Add the egg and the remaining flour mixed with psyllium. Quickly knead into a smooth dough.
5. Place the dough in a cool area for 30 minutes to 1 hour.
6. Roll out the dough on a floured surface into a rectangular sheet. Use a dough cutter to divide it into equal rectangular pieces.
7. Score each piece with your desired number of cuts and slightly bend them to open up the scores.
8. Bake on a parchment-lined baking sheet at 250°C (482°F) for about 10-15 minutes.
9. If desired, brush the kampanisus with egg and sprinkle coarse sugar, fine sugar, or a cinnamon-sugar mixture on top.
