Ingredients:

- 400 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 1 tbsp butter
- 1 l vegetable broth
- 200 ml cooking cream
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Clean and slice the mushrooms.
2. Peel and finely chop the onion and garlic.
3. Heat the butter in a pot and add the onion and garlic. Sauté over medium heat until soft.
4. Add the sliced mushrooms and cook for a few minutes until they start to soften.
5. Pour in the vegetable broth and bring to a boil. Let the soup simmer on low heat for about 15 minutes.
6. Stir in the cooking cream and mix well. Season with salt and pepper.
7. Blend the soup with an immersion blender or in a countertop blender until smooth, if desired.
8. Serve the soup hot, garnished with fresh parsley.
