A delicious gluten-free French bread that is crispy on the outside and soft on the inside. Perfect for baking and serving.
Preparation Time: 1.5 hours (30 min rising + 1 hour baking)
Serving Size: 1 loaf

Ingredients:

- 1 cup warm water (about 110°F/43°C)
- 1 packet dry yeast
- 1 teaspoon coconut sugar or honey
- 2 egg whites
- 2.5 cups gluten-free flour blend
- 1 cup tapioca flour
- 1 cup millet flour
- 1 tablespoon olive oil
- 2 teaspoons xanthan gum
- A pinch of quality salt

Instructions:

1. In a bowl, combine 1 cup of warm water, dry yeast, and coconut sugar or honey. Mix well.
2. In another bowl, whip the egg whites until frothy.
3. Add the gluten-free flour blend, tapioca flour, millet flour, olive oil, and xanthan gum to the whipped egg whites.
4. Pour the yeast-water mixture into the bowl and season with salt. Knead the dough until it is fairly loose.
5. Transfer the dough to a loaf pan and cover it with a kitchen towel. Allow it to rise for 30 minutes.
6. Preheat the oven to 450°F (225°C) and place a dish with hot water on the bottom rack of the oven.
7. Make slashes on top of the risen bread with a knife and bake for one hour on the middle rack.
