A delicious gingerbread cake with a creamy filling, perfect for festive celebrations or as a sweet treat during the holiday season.
Preparation Time: 30 minutes + 4 hours cooling time

Ingredients

Base:
- 300 g gingerbread cookies
- 100 g butter
Filling:
- 1 dl sugar
- 1 egg
- 600 g plain cream cheese
- 2 dl heavy cream
- 1 tsp gingerbread spice
- 1 tbsp vanilla sugar
- 1 dl lemon juice
- 7 sheets of gelatin
Topping:
- 2 dl mulled wine (glögi)
- 3 sheets of gelatin

Instructions

1. Prepare the base: Line the bottom of a springform pan with parchment paper. Crush the gingerbread cookies into fine crumbs and melt the butter. Mix the crushed cookies and melted butter together.
2. Press the cookie mixture firmly into the bottom of the pan and place it in the refrigerator to set.
3. Prepare the filling: Soak the gelatin sheets in cold water for about 5-10 minutes. In a bowl, mix sugar and egg. Add cream cheese, heavy cream, gingerbread spice, vanilla sugar, and lemon juice. Blend until smooth.
4. Heat a small portion of the filling in a saucepan and add the soaked gelatin sheets until they dissolve. Mix the gelatin mixture into the filling.
5. Pour the filling over the gingerbread base and smooth the surface. Let it set in the refrigerator for at least 4 hours.
6. Prepare the topping: Soak the gelatin sheets in the mulled wine and heat until the gelatin has dissolved. Pour the mulled wine over the filling and let it set again in the refrigerator.
7. Serve chilled and enjoy!
