Ingredients
- 400 g fresh salmon - 200 g quinoa
- 1 lemon (juice and zest)
- 100 g fresh peas
- 50 g butter
- 100 ml cream
- Salt and pepper to taste
- Fresh herbs (such as dill or parsley)
Instructions
1. Rinse the quinoa under cold water and cook it according to the package instructions. Add salt to taste.2. Zest the lemon and squeeze its juice into a bowl.
3. Heat the butter in a pan and add the fresh peas. Sauté for a few minutes until tender.
4. Pour in the cream and lemon juice to the pan. Stir well and let it simmer for a moment.
5. Season the sauce with salt, pepper, and lemon zest.
6. In another pan, sear the salmon fillets until cooked through and golden brown on both sides.
7. Serve the salmon over the quinoa with the pea sauce drizzled on top. Garnish with fresh herbs.
