Ingredients:
- 300 g fresh salmon
- 2 dl quinoa
- 1 avocado
- 1 red onion
- 1 lime
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
1. Rinse the quinoa under cold water and cook according to package instructions.
2. Cut the salmon into strips and season with salt and pepper.
3. Peel and slice the avocado and red onion.
4. Squeeze the lime juice into a bowl and mix in the olive oil.
5. In a bowl, combine the cooked quinoa, salmon, avocado, and red onion. Gently mix together.
6. Drizzle the lime-olive oil mixture over the salad and toss again.
7. Garnish with fresh cilantro and serve immediately.
