A delicious and quick veggie spaghetti skillet, perfect for using up leftover spaghetti and adding variety to your meals. Great as a leftover dish! Preparation Time: 20 min

Ingredients:
- 200 g cooked spaghetti - 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 100 g cherry tomatoes, halved
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Heat the olive oil in a skillet over medium heat. 2. Add the chopped onion and crushed garlic, sauté for about 2-3 minutes.
3. Add the bell pepper and zucchini, cook for an additional 5-7 minutes until the vegetables are tender.
4. Add the spaghetti and cherry tomatoes to the skillet. Mix well.
5. Season with oregano, salt, and pepper. Cook for a few more minutes until all ingredients are heated through.
6. Serve immediately, garnished with fresh basil if desired.
