This Mediterranean Lamb Stew is a hearty and flavorful dish, perfect for a cozy dinner. Tender lamb is slow-cooked with aromatic vegetables and herbs, creating a rich and satisfying meal.
Ingredients:
- 800 g lamb meat
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, crushed
- 2 medium carrots, diced
- 2 celery stalks, diced
- 400 g crushed tomatoes
- 250 ml red wine
- 200 ml beef broth
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and sauté until it is soft and slightly golden.
3. Stir in the crushed garlic, diced carrots, and diced celery; cook for a few more minutes.
4. Add the lamb meat and brown it on all sides until nicely colored.
5. Pour in the crushed tomatoes, red wine, and beef broth; mix well.
6. Add the rosemary and thyme, and season with salt and pepper.
7. Cover the pot and let it simmer on low heat for about 1.5 to 2 hours until the meat is tender.
8. Serve warm, ideally with focaccia bread.
