Ingredients:
- 200 g quinoa - 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 avocado
- 150 g cherry tomatoes
- 1 red onion
- 100 g feta cheese
- 1 dl fresh parsley
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
1. Cook the quinoa according to package instructions and let it cool. 2. Chop the cucumber, bell peppers, avocado, cherry tomatoes, and red onion into small pieces.
3. In a large bowl, combine the cooled quinoa and chopped vegetables.
4. Crumble the feta cheese into the salad and add the chopped parsley.
5. Prepare the dressing by mixing olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and mix well.
6. Allow the salad to marinate for a while before serving.
