Ingredients:
- 1 cup quinoa
- 2 cups water
- 100 g cherry tomatoes
- 1 cucumber
- 1 red bell pepper
- 1 avocado
- 100 g feta cheese
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Rinse quinoa under cold water and cook it in 2 cups of water for about 15 minutes until soft and the liquid is absorbed.
2. Halve the cherry tomatoes, dice the cucumber and bell pepper, and slice the avocado.
3. Crumble the feta cheese into small pieces.
4. In a large bowl, combine the cooked quinoa, vegetables, and feta cheese.
5. Prepare the dressing by mixing olive oil, balsamic vinegar, salt, and pepper.
6. Pour the dressing over the salad and mix well.
7. Garnish with fresh basil before serving.
