Ingredients:
- 400 g grilled chicken - 1 dl pesto
- 200 g couscous
- 2 dl water
- 1 bell pepper (red or yellow)
- 1 cucumber
- 150 g cherry tomatoes
- 100 g feta cheese
- Fresh basil (for garnish)
- Salt and pepper to taste
Instructions:
1. Cook the couscous according to package instructions. Add salt and stir well. 2. Slice the grilled chicken into strips and mix it with the pesto in the couscous.
3. Chop the bell pepper, cucumber, and cherry tomatoes.
4. Combine all ingredients in a large bowl and mix thoroughly.
5. Crumble the feta cheese on top of the salad and garnish with fresh basil.
6. Season with salt and pepper to taste.
7. Serve immediately or let it chill in the refrigerator for a while before serving.
