Finnjävelin Kalakeitto

A delicate and creamy fish soup that combines traditional Finnish flavors with a modern twist. Preparation Time: 30 minutes
Serving Size: 4
Ingredients:
- 500 g fresh fish (e.g. perch or salmon) - 1 l fish stock
- 2 dl heavy cream
- 1 dl white wine
- 1 onion, finely chopped
- 2 potatoes, diced
- 2 carrots, sliced
- 1 dl fresh herbs (e.g. dill and parsley)
- Salt and black pepper to taste
- 2 tbsp butter
Instructions:
1. Heat the butter in a large pot and add the chopped onion. Sauté the onion over low heat until it becomes soft. 2. Add the fish stock, potato cubes, and carrot slices to the pot. Cook for about 10 minutes, until the vegetables are tender.
3. Cut the fish into bite-sized pieces and add it to the soup. Let it cook for about 5 minutes.
4. Pour in the heavy cream and white wine. Season with salt and black pepper.
5. Heat the soup gently, but do not let it boil. Add the fresh herbs just before serving.
Serve the soup warm, accompanied by fresh bread.
