A refreshing and delicious salad that's perfect as a side dish or a light meal. Preparation time is just 10 minutes, and it serves 2-3 people.Ingredients:
- ½ bell pepper
- 1 stalk of leek or 1-2 shallots
- A handful of cherry or mini plum tomatoes
- ½ cucumber
- ½ head of iceberg lettuce or a few leaves of butter lettuce
- ½ container of feta or salad cheese, diced
Instructions:
1. Tear the lettuce into a bowl.
2. Chop the bell pepper, leek/shallots, cucumber, and tomatoes.
3. Add the chopped vegetables to the lettuce.
4. Stir in the diced feta or salad cheese and mix well.
5. Serve with a good dressing of your choice.
