This creamy mushroom pasta is a delicious and rich dish that comes together quickly, making it perfect for a weekday dinner.

Ingredients:

- 300 g pasta (e.g., spaghetti or penne)
- 200 g fresh mushrooms (e.g., button or chanterelles)
- 1 onion
- 2 cloves garlic
- 200 ml cream
- 50 g Parmesan cheese (grated)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:

1. Cook the pasta in salted water according to the package instructions until al dente. Drain and reserve a little of the pasta water.
2. Peel and chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until soft.
4. Add the mushrooms to the skillet and cook until golden brown and the liquid has evaporated.
5. Pour the cream into the mushroom mixture and stir well. Heat the sauce but do not bring it to a boil.
6. Add the cooked pasta to the mushroom sauce and mix. If needed, add a little reserved pasta water to ensure there's enough sauce.
7. Season with salt and pepper. Stir in the grated Parmesan cheese.
8. Serve immediately, garnished with fresh parsley.
