Ingredients:

- 500 g chicken fillets
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 tsp paprika powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 can (400 g) crushed tomatoes
- 100 g black olives, sliced
- 1 dl fresh parsley, chopped

Instructions:

1. Heat the olive oil in a large skillet over medium heat.
2. Add the chopped onion and crushed garlic, sautéing until soft.
3. Add the chicken fillets to the skillet and cook until golden brown.
4. Stir in the diced bell peppers, paprika powder, salt, and black pepper. Cook for a few more minutes.
5. Pour the crushed tomatoes into the skillet and mix well. Let simmer on low heat for about 10 minutes.
6. Add the sliced olives and chopped parsley. Stir and cook for another 5 minutes.
7. Serve warm with rice or fresh bread.
