These delicious falafel balls are a great addition to pitas or served alongside rice. A vegan and nutritious option that the whole family will enjoy. Preparation Time: 30 minutes

Ingredients:
- 1 can chickpeas (about 400 g), rinsed and drained
- 1 small red onion, chopped
- 2-3 garlic cloves, crushed
- 1 cup fresh parsley, chopped
- 1 cup fresh cilantro, chopped (optional)
- 1 tsp cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 cup all-purpose flour (or gluten-free flour)
- Oil for frying
Instructions:
1. In a food processor, combine the chickpeas, red onion, garlic, parsley, and cilantro (if using) until finely chopped but not completely smooth.
2. Add the spices, salt, and flour, and mix until all ingredients are well combined. The mixture should be firm enough to shape into balls.
3. Shape the mixture into balls about 2-3 cm in diameter.
4. Heat oil in a frying pan over medium heat. Fry the balls for about 3-4 minutes on each side until golden brown and crispy.
5. Place the fried balls on paper towels to absorb excess oil.
6. Serve warm with pitas, tzatziki, and vegetables, or alongside rice.
