Serving Size: 4 servings
Ingredients:
- 300 g pasta (spaghetti or tagliatelle)
- 150 g bacon or pancetta
- 3 egg yolks
- 100 ml cream
- 50 g Parmesan cheese (grated)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted boiling water according to the package instructions until al dente.
2. Meanwhile, heat a frying pan and cook the bacon or pancetta until crispy. Remove from the pan and drain excess fat.
3. In a bowl, mix together the egg yolks, cream, and grated Parmesan. Season with salt and black pepper.
4. Once the pasta is cooked, drain it but save a bit of the pasta water.
5. Return the pasta to the pot and add the bacon. Quickly pour the egg mixture over the pasta and stir to combine, ensuring the eggs do not scramble.
6. If needed, add a bit of the reserved pasta water to achieve a creamy consistency.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
