A delicious Middle Eastern classic, perfect for breakfast or a light meal. Soft falafels are served in a crispy coating, accompanied by a refreshing tahini yogurt sauce.
Preparation Time: 1 hour
Serving Size: 4-6 servings

Ingredients:

- 400 g chickpeas (soaked overnight)
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1/2 dl fresh parsley, chopped
- 1/2 dl fresh coriander, chopped
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp baking powder
- 1/4 dl all-purpose flour
- Oil for frying

Tahini Yogurt Sauce:

- 1 dl plain yogurt
- 2 tbsp tahini
- 1 tbsp lemon juice
- Salt to taste
- Water as needed (for thinning)

Instructions:

1. Rinse the soaked chickpeas well and drain them.
2. Place the chickpeas, onion, garlic, parsley, coriander, cumin, salt, black pepper, baking powder, and flour in a food processor. Blend until a smooth mixture is formed.
3. Shape the mixture into small balls or flat patties.
4. Heat oil in a frying pan over medium heat. Fry the falafels for about 3-4 minutes on each side, until golden brown and crispy.
5. Prepare the tahini yogurt sauce by mixing all the ingredients in a bowl. Add water if you want to thin the sauce.
6. Serve the falafels warm with the tahini yogurt sauce.
