A delicious soft shell crab burger that combines crispy crabs, fresh vegetables, and a flavorful red cabbage mayonnaise. Quick and easy to prepare, perfect for a treat!

Ingredients:

- 4 soft shell crabs (thawed if frozen)
- 3 tablespoons fish sauce
- 3 tablespoons rice vinegar
- 3 tablespoons potato flour
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 0.5 teaspoon chili powder
- Cayenne pepper to taste
- 5-7 dl canola oil (for deep frying)
- 1 dl good mayonnaise
- 1 tablespoon red cabbage powder (or garlic to taste)
- Iceberg lettuce (sliced)
- 1 avocado (sliced)
- Sweet chili sauce
- Fresh cilantro
- 4 good burger buns

Instructions:

1. Prepare the soft shell crabs: cut off the eyes, remove the shell edges and gills, and trim the tail.
2. In a bowl, mix together potato flour, all-purpose flour, salt, garlic powder, chili powder, and cayenne pepper.
3. In another bowl, combine fish sauce and rice vinegar.
4. Pat the crabs dry with paper towels and brush both sides with the fish sauce-vinegar mixture.
5. Dredge the crabs in the flour-spice mixture and shake off any excess flour.
6. Heat the oil to 180°C (356°F) and deep fry the crabs in batches for about 1-2 minutes until golden brown. Drain on paper towels.
7. Toast the burger buns.
8. Assemble the burgers: spread mayonnaise on the bottom bun, add red cabbage powder, crispy crabs, iceberg lettuce, avocado, sweet chili sauce, and fresh cilantro. Top with the bun lid.
