A Croatian delight that combines flavorful grilled pork skewers with colorful bell pepper rice. This dish is perfect for celebrations or a weekday meal.

Ingredients

For the Skewers:
- 500 g pork tenderloin, cubed
- Oil
- Herbs (e.g., thyme, oregano)
- Black pepper
- Salt
For the Bell Pepper Rice:
- Oil for frying
- 2 onions, chopped
- 1 celery stalk, chopped
- 250 ml long-grain rice
- 500 ml boiling water
- 1 bay leaf
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- Black pepper
- Salt to taste

Instructions

1. Marinate: In a bowl, mix together the oil, herbs, black pepper, and salt to create a marinade. Add the cubed pork and mix well. Cover and refrigerate for a couple of hours.
2. Skewers: Thread the marinated pork cubes onto skewers. Grill the skewers on a hot grill, turning occasionally, until the meat is cooked through and beautifully browned.
3. Bell Pepper Rice: Heat oil in a pan and sauté the onions and celery until soft. Add the rice and fry for a few minutes while stirring.
4. Add the boiling water and bay leaf to the rice mixture. Cover and let it simmer for about 15 minutes.
5. Stir in the sliced bell peppers and cook for an additional 5 minutes, stirring occasionally. Remove the bay leaf and season the rice with salt and black pepper.
6. Serve the grilled pork skewers alongside the bell pepper rice.
