Ingredients:
- 500 g fresh mushrooms
- 1 onion
- 2 garlic cloves
- 400 ml vegetable broth
- 200 ml cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Chop the onion and garlic finely.
2. Slice the mushrooms.
3. Heat the butter in a pot and sauté the onion and garlic until soft.
4. Add the mushrooms and cook until they are tender and the liquid has evaporated.
5. Pour in the vegetable broth and let it simmer for about 10 minutes.
6. Blend the soup until smooth using an immersion blender.
7. Stir in the cream and season with salt and pepper. Heat the soup again.
8. Serve the soup garnished with fresh parsley.
