These delicious chickpea cookies are the perfect blend of flavor and healthy ingredients. They are gluten-free and high in protein, making them a great alternative to traditional cookies.

Ingredients:

- 1 can (about 400 g) chickpeas, rinsed and drained
- 2 tablespoons peanut butter or almond or cashew butter
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips

Instructions:

1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
2. Place the rinsed chickpeas, peanut butter, honey, vanilla extract, baking powder, and salt in a blender. Blend until smooth.
3. Stir in the chocolate chips gently.
4. Form the dough into balls and place them on the baking sheet, leaving space in between as they will spread while baking.
5. Bake in the oven for about 10-12 minutes or until the cookies are golden brown.
6. Allow to cool for a moment before serving.
