A delicious and hearty mushroom soup perfect as a starter or a light main dish.
Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh mushrooms
- 1 large onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean the mushrooms and slice them.
3. Heat the butter in a pot over medium heat and sauté the onion and garlic until soft.
4. Add the sliced mushrooms and cook for a few minutes until golden brown.
5. Pour in the vegetable broth and let the soup simmer for 10 minutes.
6. Blend the soup with an immersion blender or transfer to a blender until smooth.
7. Stir in the cream and heat the soup again. Season with salt and pepper to taste.
8. Serve hot, garnished with fresh parsley.
